DIY Cold Slab for Pastry- and Candy-Making
If you have a hot kitchen and/or don't have a marble slab for pastry- and candy-making, here's a simple hack to keep your ingredients cold using a common kitchen item.
If you don’t have a marble slab for making candy or rolling pastry dough, use the back of a frozen cookie sheet. Just place it in the freezer about 20 minutes before you need it. If you will be working on your recipe for an extended period of time, you can freeze a second cookie sheet, replacing the one you're working with when necessary.
