How To Measure Ingredients Accurately

Never does this adage apply more than when measuring ingredients for baking. Dry and liquid measures aren’t meant to be interchangeable. Spoon such dry ingredients as flour and sugar into dry measuring cups, then level them with the straight side of a knife, without packing down the ingredients. Use liquid measuring cups for liquids, and read the amount at eye level. The top of the liquid should exactly meet the line for the most accuracy.
Quick tip for leveling dry ingredients: A chopstick is a perfect leveling tool when measuring dry ingredients. Keep one right in your flour canister so you can aerate the flour and then level the measure with the chopstick. Just save a pair of disposable chopsticks from your next take-out—very practical and inexpensive.
