How to Bake Mini Tart Shells-No Pie Weights Needed!
If you are making mini tarts but would like to skip filling the shell with foil or parchment paper and pie weights, try this tip. The pie shells come out perfectly every time.
Instead of placing the dough inside the mini tart pans, turn the pan upside down and press pastry over the outside. Then trim the excess, prick extensively with a fork and bake. This prevents the bottom from puffing up, or the sides from slumping down as the fat melts in the pastry.
