How to Dry Tomatoes in the Oven

Preserve your summer tomatoes with this technique to dry in the oven—you can even preserve them in olive oil and herbs for more flavor.

Dry your own by slicing ripe tomatoes 1/2" thick or Romas in half, lengthwise. Place on a cooling rack, cutside-up. Lightly salt them. Place rack on cookie sheet. Dry in a 190° oven for 6–10 hours. Freeze them on the rack and then store in plastic bags in freezer.

You can pack dried tomatoes in a jar filled with olive oil and fresh herbs. Refrigerate up to 2 weeks.
