How to "Flour" with Cocoa for Chocolate Baked Goods
Buttering and flouring a pan can help your baked goods release cleanly-but can leave a white film on chocolate-based desserts. Here's a super-quick tip to solve this problem.
Whenever you dust a pan with flour for chocolate cake or brownies, a white film on the outside of the cake appears after it bakes. So, use cocoa to “flour” the pan instead. Simply butter the pan with softened butter and put a couple spoonfuls of cocoa powder in the pan. Gently shake the cocoa powder around the pan until lightly coated, and tap out the excess cocoa powder.
