Store butter in the freezer, wrapped well, so it doesn’t go bad or get an off-taste. When you need butter, use a metal box grater to grate the frozen butter. If you forget to take it out ahead of time for a recipe that calls for it at room temperature. Spread the grated shavings on a plate and let it set for about 10 minutes. These smaller pieces hit room temperature quickly because of their size. It will not affect the performance, taste or appearance of orecipe.
