How to Make Quick Pan-Roasted Garlic
Roasted garlic is inimitable in its sweet, mild garlic flavor, but it can take up to an hour to roast a whole head. Here's a quick method for pan-roasting garlic.
If you need roasted garlic fast, toss 5–6 unpeeled cloves into a small, heavy skillet. Cover and cook over medium heat for five minutes, turning cloves over halfway through. Uncover and cook 3–5 minutes, occasionally shaking pan to turn cloves until skins are slightly charred. The cloves are done when they can be pierced easily with a knife. Cool, peel, and mash with a fork. Five cloves will make about two teaspoons of roasted garlic puree.
