How to Prevent a Gap in Double-Crust Pies
When you remove a double-crust pie from the oven, you're always crossing your fingers for a masterpiece, but sometimes the top crust separates from the filling, causing a gap. Here's a simple way to prevent this baking problem.
It's not unusual for the top crust of a double-crust pie to separate from the edges and the filling reduces, leaving a hollow space in the pie. By placing a kitchen towel on the pie immediately after taking it out of the oven, I can gently press the crust against the fruit and around the edges.
