How to Roast Garlic Without Foil
Here's a simple way to roast a head of garlic in the oven without foil.
First, get the best, freshest garlic you can find. It should be white, firm, and closed with a papery exterior. Next, cut off the stem and the top third of the head to partially expose the garlic cloves. Place the heads in an oven-safe pan with the cut side of the garlic facing up. Pour olive oil on the exposed part of the garlic. Bake in a 375° oven for about 30 minutes or until the garlic begins to soften. While the garlic is still warm, squeeze the cloves out of their papery body. They should pop right out.
