How to Oil a Grill Grate and Add Flavor
Oil your grill grates and add tons of flavor with this easy Test Kitchen-approved tip.
After preheating your grill, brush it clean. Then rub the grate with a piece of unsliced pork fatback that you keep in your freezer. The fat melts to lubricate the grate, while adding great flavor. When you're done, just pop the fatback back into the freezer until the next time you grill.
If, and when, you can’t find fatback, simply use the fatty side of salt pork — both work.
