How to Preserve Fresh Ginger
Fresh ginger freezes well, but so it keeps its impact and to give it the tiniest punch of Asian-inspired flavor, try this storage tip.
After using a small amount of fresh ginger, the rest often dries out and goes to waste. To keep it fresh, store large, peeled pieces in sake, Japanese rice wine. Place ginger pieces in a glass jar filled with enough sake to cover, and replace the lid. The ginger keeps for weeks, and it absorbs only a little of the sake flavor. To use the ginger, rinse it, then slice and mince as usual.
