How to Segment Citrus
Learn a quick trick of the trade when it comes to cutting perfect sections of citrus fruits for your recipes.
To section a citrus fruit, cut off the top and bottom just to the pulp. Stand it on one end and cut away all the peel and bitter white pith, following the curve of the fruit.
Now, slice out a segment by cutting next to the membrane on one side of the segment, all the way to the middle of the fruit. Cut it again on the other side of the segment and lift it out. Repeat all the way around the fruit.
