How to Pit & Slice Fresh Mango

To get the most out of a fresh mango, it helps to know the anatomy of the fruit. In the center is a large flat seed, with two fleshy parts on either side. Slice along the flat side of the seed, removing as large a slice as you can, then repeat on the other flat side.  

    If dicing, make crosshatch cuts all the way through to the peel of each section. These cuts can be as small as you want. Then bend it inside out and slide your knife between the peel and the flesh. The cubes will fall right off.

 

To slice, follow the same process, but only make cuts in one direction. You can also use a vegetable peeler to peel the skin off the mango first.
