Enhancing Flavor with Sour & Sweet Ingredients

Sour and bitter flavors can be added to any dish to create a new taste experience, like we did with our Sausage & Fennel Orzotto. Any number of ingredients can be used as sour and bitter options in the dish. For a sour substitute, try adding ½ cup diced tomatoes, swapping Tabasco for the pepper flakes, or adding a splash of red wine vinegar instead of lemon zest at the end of cooking. For another slightly less bitter option, try substituting sautéed bell peppers for the broccoli rabe as your side dish.
