Frying Tortillas
Sautéing corn tortillas in oil so they'll be flavorful and pliable for folding is essential for making authentic-tasting tacos. Here's how to do it:
Heat just a small amount of oil (about half of a teaspoon) in a skillet over medium-high heat. When the oil is hot, fry one tortilla at a time for 30–45 seconds on one side. Flip the tortilla and fry the other side for another 30–45 seconds (1–1 1/2 minutes total). Remove tortilla and stack on a paper-towel-lined plate. If necessary, add more oil to the skillet and repeat with more tortillas. Once all tortillas are fried, fold tortillas around taco fillings right away before they become brittle.
