How to Cook with Seitan
Wheat Meat
Affectionately called “wheat meat” for its meaty texture and wheat gluten base, seitan [SAY-tan] makes a terrific doppelganger for chicken. High in protein but low on flavor, it easily “borrows” taste from whatever’s cooked with it. For the best texture, add it to dishes just to heat through. Look for seitan in refrigerated sections of Asian or natural foods markets.
