How to Cook with Greek Yogurt
Greek-style Yogurt
Greek yogurt is made by straining plain yogurt for 2–3 hours to achieve a pudding-like consistency. It’s know for its creaminess and is usually made with whole-fat cow’s milk. Because of its high fat content (about 10%), it’s less apt to separate when heated, making it a great addition to sauces and soups. Greek yogurt can be found at gourmet markets and in the dairy or health food aisle of many supermarkets.
