When purchasing scallops, look for those that are pale beige to creamy pink in color. Stark white scallops indicated they've been soaked in water — a marketing tactic to increase their weight. Before you cook them, you will need to remove the “foot”, a small flap that held the scallop inside its shell. Although it's edible, it gets very chewy and rubbery once cooked.
