Draining cooked lasagna noodles in a colander can cause them to tangle or tear. To avoid this, use metal tongs to pull out individual noodles as soon as they’re al dente. Then drain them on a wire rack placed over a baking sheet (the sheet catches excess water). The noodles cool much more quickly and are easier to work with.
