How to Make Easy Cucumber Wraps
Cucumber wrap Cucumber wraps are an attractive and easy way to showcase Basic Chicken Salad and similar salads. Start by cutting very thin slices of cucumber; a mandolin or sharp vegetable peeler works best. Once you slice down to the seeds on one side, turn the cucumber over and slice on the other side. (You can get about eight slices from one medium-sized cucumber).
To assemble the wraps, place a oiled 3-inch ring mold on a serving plate and press two cucumber strips around the inside of the ring so the slices overlap. Lightly pack 1 cup chicken salad inside ring, then carefully lift off the mold. Finish plating the dish and serve immediately.
