The Spoon and Sweep Method for Accurate Flour Measuring
Measure Up! How you measure flour can have a dramatic effect on the amount that ends up in a recipe. Many cooks dip their measuring cup into the flour and either shake or level off the excess. This can result in as much as 25 percent more flour than called for.
To properly measure flour, we employ what’s known as the “spoon and sweep method.” Use a spoon to fluff flour in the bag or canister, then lightly spoon it into your measuring cup. Without packing, use a straight-edged spatula or knife to level the flour until it’s even with the top of the measuring cup.
