Roasting your own green chiles at home is easy and exponentially more delicious than the canned variety. Just roast chiles over a gas burner or in a 400-degree oven for 20 minutes until the skins are blackened; put in a small bowl and cover with plastic wrap, letting steam accumulate (this makes them easy to peel). Once slightly cooled, remove the skin, discard seeds, and chop.
