What is the difference between regular, raw, and manuka honey?

Regular honey is honey that’s been pasteurized (heated) to kill any yeast and prevent fermentation, plus it’s filtered.
Raw honey is any honey that hasn’t been heated or filtered. It’s honey that goes from the hive to the shelf. It’s made from any type of flower or plant, and because it’s not heated, more of its vitamins and natural enzymes are preserved.
Manuka [Mah-noo-kah] honey comes from the nectar of the Manuka bush (which is only grown in New Zealand and Australia). It’s hailed for its medicinal and antibacterial properties (due to higher quantities of the enzyme, methylglyoxal, MGO), and is said to be the healthiest type of honey available. It can be raw or heated (which may remove some of its beneficial components.)
