Grilled Salmon Rillettes

Grilled Salmon Rillettes are made from a marinated salmon fillet cooked on the grill, then flaked and mixed into a creamy concoction that preserves it and infuses it with flavor. The mixture goes perfectly on crackers or grilled crostini.

To add some crispy bits to the rillettes, grill the salmon skin until completely crisp, but not burnt, then crumble over top or stir in.

Instructions

Preheat grill to 325°. Brush grill grate with oil.

Combine lemon juice, salt, paprika, and fennel; pour over salmon and marinate for 10 minutes.

Grill salmon, skin side down, until skin sizzles, 34 minutes, flip and grill until salmon is firm and grill marks appear, 3 minutes more. Transfer salmon to a plate, chill; 58 minutes. Gently flake salmon with a fork.

Combine salmon, butter, shallots, chives, wine, and sour cream.

Serve rillettes on crostini or crackers. Store rillettes in the refrigerator for up to 3 days.
