Grilled Shrimp Ceviche

Classic ceviche is usually made with raw seafood, but grilling shrimp adds a smoky dimension. Serve Grilled Shrimp Ceviche in individual cups with tortilla chips on the side for a fun, summery appetizer.

What is Jicama?

Jicama is a root vegetable with a crisp texture and a slightly sweet flavor. It’s perfect when you want to add a little crunch to ceviche.

Instructions

Preheat grill to 350°. Brush grill grate with oil.

Combine lime juice, lemon juice, orange juice, sweet peppers, serrano, oil, cumin, and salt.

Stir in avocado, jicama, and cilantro.

Grill shrimp until opaque, 23 minutes, turning often; transfer to a cutting board. When cool enough to handle, chop shrimp.

Stir shrimp into citrus mixture, until combined. Cover ceviche with plastic wrap and chill until ready to serve. Serve ceviche with tortilla chips.
